Beer, Rat In (Serves 4)

| Ingredients |
1 ½ lb Rat breast, diced
1 Large red onion, chopped
2 Large carrots, peeled and sliced
4 oz Mushrooms
Oil for frying
1 Cup beer (do not use lager as a substitute)
Ground black pepper
1 Teaspoon vinegar
Pinch mixed herbs

| Instructions |
Preheat oven to 160C, 325F, Gas 3.
Fry the diced rat and onion in the oil until brown.
Season.
Add the carrots and mushrooms and cook for a further few minutes.
Add the above to a casserole dish and add the rest of the ingredients.
Stir.
Cook for 2 hours.
Check during cooking and add water or beer if it is becoming too dry.
Serve with mashed potatoes.
