Hamlien Pie (Serves 4)

| Ingredients |
1 lb Minced rat
1 Onion diced
1 Carrot diced
10 oz Beef stock
For topping:
Mashed potato
Butter and milk to taste.

| Instructions |
Preheat oven to gas mark 5
Fry onions and carrots until brown.
Add the minced rat and cook thoroughly, about 20 minutes.
Add the beef stock and heat through.
Put the mixture into a casserole dish and add the mashed potato.
Bake in oven for 20 minutes until topping is golden brown.
Serve with seasonal vegetables.

Hot rat and cheese sandwiches

| Ingredients |
1/4 cup butter, softened
2 tablespoons prepared horseradish mustard
2 tablespoons chopped onions
1 teaspoon poppy seeds
1 teaspoon dill seed
8 slices Swiss cheese
8 slices cooked rat
8 hamburger buns

| Instructions |
Preheat oven to 250 degrees F (120 degrees C).
Combine butter, mustard, onions, poppy seeds and dill seed. Spread insides of buns with this mixture. Place a slice of cheese and a slice of rat inside each bun.
Wrap buns in foil and place in preheated oven. Bake for 15 to 20 minutes, until cheese has melted.
