Kebabs, Rat

2 Thick slices of rat
113g Streaky bacon rashes
227g Small Tomatoes
113g Small mushrooms
A few bay leaves

| Instructions |
Trim the meat of all fat and gristle and cut it into cubes.
Steep it for at least two hours before cooking-overnight if possible-in a marinade of 3 or 4 tablespoons olive oil and 1 lemon juice, well seasoned with salt, black pepper, a bay leaf or two, spray of lemon thyme or rosemary and a crushed clove of garlic.
(This ensures the meat being tender as well as giving it a wonderful flavour.)
Thread four skewers alternately with the cubes of meat, small whole mushrooms, halved small tomatoes, and folded half rashes of bacon.
A thin onion ring or a half bay leaf on either side of the meat will improve the flavour still further.
Cook the kebabs for about 10 minutes under a hot grill, turning them over halfway through.
Serve on a mound of plain, boiled rice, well dried in the oven, and with lettuce or watercress salad.

2 Tbsp. salt
2 Cups flour
2 Tbsp. pepper
4 Tbsp. paprika
1 Tsp. garlic salt
1 Tbsp. ground mustard
1 Tbsp. ground French thyme
1 Tbsp. sweet basic leaves
1 Tsp. ground oregano
1 Tbsp. ground Jamaica ginger

| Instructions |
Mix all spices and flour together.
Take pieces of cut-up rat and dip in raw egg (slightly beaten).
Roll in spices. Fry rat in oil.
Bake in 350 F oven for 45 minutes in foil.
