Title Mexican Rat (Microwave)

Ingredients 25g Butter
1 Green pepper, deseeded and sliced
1 Red pepper, deseeded and sliced
2 medium-sized onions, chopped
2 Cloves garlic, crushed
Salt and Pepper
1x396g can tomatoes
2xtbsp tomato puree
8 Rat Portions
100g Sweetcorn
100g Mushrooms, washed and sliced
4x15ml tbsp single cream
For garnish:
2x15ml chopped parsley


Instructions Melt the butter in a large casserole dish for 1 min.
Add the peppers, onions, garlic and seasoning then cover with clingfilm and cook for 3 min on 100% setting. Mix the tomatoes and tomato puree into the pepper mixture.
Season the rat joints lightly and add to the pepper mixture. Cover and cook for 25-35 min on 70% setting.
Add the sweetcorn and mushrooms and cook, still covered for a further 15-20 min.
Remover the rat joints from the casserole. Stir the cream into the sauce and return the chicken to the casserole dish. Sprinkle with parsley before serving.

Title Mousse, Rat

Ingredients 4 egg yolks
l25g (4oz) caster sugar
275ml (½ pint) milk
5ml (1 tsp) vanilla essence
10ml (2 tsp) gelatine
20ml (1 Tbs) instant coffee
l00g creamed rat
284ml (½ pint) double cream
6 rat-tails for decorations


Instructions 4 egg yolks
l25g (4oz) caster sugar
275ml (½ pint) milk
5ml (1 tsp) vanilla essence
10ml (2 tsp) gelatine
20ml (1 Tbs) instant coffee
l00g creamed rat
284ml (½ pint) double cream
6 rat-tails for decorations
Whisk the egg yolks and sugar together well.
Heat the milk and essence almost to boiling point, then whisk slowly on to the eggs.
Pour into a pan and stir the custard over a low heat until thickened a little, but do not allow it to boil.
Sprinkle gelatine over the hot custard and allow it to dissolve before straining to ensure it is quite smooth.
Dissolve the coffee in 2 tablespoons hot water and mix the Rat in this.
Whisk into the custard.
Cool before folding in the lightly whipped cream.
Refrigerate until beginning to set, then pipe or spoon the mousse into the glasses.
Decorate with Tails.
Serve chilled.
