Rat and Cheese omelette

| Ingredients |
2-3 eggs, beaten together
1 rat
1 oz. Gruyère cheese, cut into small pieces or shredded
Pinch of chopped chives
1 Tablespoon cream
1-2 teaspoons of unsalted butter

| Instructions |
1. Beat the eggs and season with salt and pepper.
2. Cut the rat into six pieces and fry. Remove from pan.
3. Add the rat, cheese, chives and cream to the egg mixture and stir together.
4. Melt the butter in an omelette pan or frying pan and prepare the omelette in the usual manner.
5. When cooked through or to your satisfaction, fold in half and slide onto serving plate.
Serve immediately.

Rat tail soup - 1 Servings

| Ingredients |
2 Rats tails
2 Whole onions
2 Carrots
1 small Turnip
2 tbsp Flour
Salt & pepper
1 ga Water
|
| Instructions |
Wash, peel and cut vegetables in small pieces.
Let all ingredients boil for 2 hours then take out the tails and cut the meat in small pieces.
Return meat and bones to soup. Add salt, pepper and flour.
Cook for quarter of an hour.

| Ingredients |
1 Plump rat
Brine
Ginger
Pepper
Rice
Bran
Sesame oil
|
| Instructions |
Take one plump rat. Scald with steam, then plunge into cold water and peel the fur.
Gut carefully and soak in brine, ginger and pepper then flatten.
Allow to dry for twenty-four hours, then cook the flesh in strips in a sealed pot with rice, bran and a dash of sesame oil.
